This is one of the core questions around data equity. So glad the team is working on it.
There is no such thing as a list of which categories, labels, or names are the best or most equitable - since it entirely depends on what the purpose is of the data being collected and the context of that collection.
The best practices in doing this type of data collection involves a process of paying attention to these choices and other related one. One tool we use to help people get started thinking about what will work for them is called the Social Identity Sorting Dials:
