Comparing one racial category to a population

A question came up for me during the recent Talking Data Equity with Dr. Lauren Arrington, Dr. Kelly Bower and Dr. Brianna Kramer: One of their top recommendations was to compare racial/ethnic subpopulations to the entire population rather than using another subpopulation (e.g., white) as a referent. I love this & always try to do it when I can, but I run into difficulties when trying to determine statistically significant differences between one category & the entire population. I was only ever taught to test for significance using t-tests & mutually exclusive categories. How do others go about doing this? Thanks!
